Gluten-free options are showing up in our markets and popping up at our favorite restaurants. Whether you are gluten-free or thinking about upgrading your diet to gluten-free status, we’ve put together a list of our favorite gluten-free products to make your search and your switch as smooth as possible. First, however, let’s talk a little bit about gluten.

Gluten is a protein found in wheat, barley, rye, and triticale. A gluten-free diet is one that excludes anything with this protein in it, and is the only medical treatment for celiac disease. For those that suffer from celiac disease, this protein causes an autoimmune response making the body attack the small intestine or the skin. Non-Celiac Gluten Sensitivity describes people that may have other symptoms including gastrointestinal issues and fatigue but do not have an autoimmune response to gluten. According to the NFCA, the National Foundation of Celiac Awareness, an estimated 18 million Americans have a non-celiac gluten sensitivity.
