Nothing says it’s the fall like pumpkins, and they aren’t just for Thanksgiving pies! This gourd-like squash is versatile enough to star in any sweet or savory dish, and excels in showing off a little bit of both. For instance, roasted pumpkin and caramelized onions shine in Caramelized Pumpkin Soup, with a touch of cayenne offsetting the vegetables' sweetness. Roasted pumpkin makes another appearance in Roasted Pumpkin Quinoa, a simple side dish that is packed with protein and fall flavor. Greens gets more than a boost in color in Spiced Pumpkin Salad, a mix of arugula, roasted pumpkin, sliced radishes, sweet red pepper and a light olive oil, salt and pepper dressing.

  • 2 cups vegetable broth
  • 2 sweet red peppers
  • 1 1/2 tablespoons olive oil
  • 1 medium spanish onion
  • 1 tablespoon cayenne pepper
  • 1 teaspoonred pepper flakes
  • 1 cinnamon
  • Salt and pepper to taste

  • 4 cups vegetable stock
  • 1 tablespoon olive oil
  • 1/ 2 tablespoon cayenne
  • 1 teaspoon ground ancho chile

  • 4 cups packed arugula
  • 1 radish, thinly sliced
  • 1 sweet red pepper, diced
  • 1 teaspoon cayenne
  • 3 tablespoons olive oil

  • 1/4 cup molasses
