    Summer Time means one thing Paletas!!  A Mexican treat widely popular for fighting off the summer heat paletas can be either cream based or fruit based. Popular flavors include coconut, tamarind, mango, and watermelon and arroz con leche (rice pudding). Vivid in color, bursting with flavor and endless fruit combinations paletas offer a sweet taste of summer. The word paleta (popsicle) comes from the word palo, which means stick. In Mexico every corner has its own Paletas shop or you can often find Paleteros, selling paletas from tiny refrigerated carts, in the plaza or at local sporting events.

    Paletas are easy to make, require little prepand, if using seasonal fruit, little to no sugar is needed. Paletas molds are easily found online or at restaurant supply stores. You canalso DIY by using disposable paper cups as molds. In these simple paletas, fresh pineapple is blended with a touch of lime for a perk of citrus. Freeze until set and enjoy with summer friends and family. A refreshing guilt free snack, paletas are perfect for beating the summer heat.

    Quick tip: Soak your popsicle sticks in warm water 20 minutes before using. This helps the stick to stay in place when freezing.
