Alex Garcia’s Cuban sandwich is technically a Medianoche, literally translated to “midnight,” and a type of Cuban sandwich that originated in Havana, Cuba. Served in many Cuban communities, it is named because of the sandwich’s popularity as a staple served in Havana’s night clubs right around or after midnight. Just like the traditional Cubano sandwich, the sandwich consists of roast pork, ham, mustard, swiss cheese, and dill pickles – the difference lies in the sweeter egg bread it is served on, similar to Challah.

Chef Alex Garcia is known as one of the creators of the Nuevo Latino cooking movement, and Calle OchoBabalu, and Copacabana, as well as the recently opened A.G. Kitchen on New York’s Upper West Side.
