Chicken rice soup is a traditional dish made in Ecuadorian homes and prepared in all traditional Ecuadorian restaurants. It's a healthy recipe that feeds many and even the kids will love it. Every household has their own way of making Aguado de Pollo. In the Sierra or Highlands they add tomatoes to the refrito but in La Costa they prepare it simply with red onions, bell peppers, garlic, parsley, and cilantro. Originally it's cooked with gallinas (hens), it's difficult to find this flavorful poultry, so the obvious option is to use tender pollo, or chicken, instead.
