I have always had a soft spot for shortbread cookies filled with a creamy center. I like to give them out as holiday gifts. The dough for these cookies can be stiff to pipe, so it is best to fill the pastry bag with small amounts, keeping your hand and grip close to the tip. This will allow you to apply more pressure and pipe more easily.
