    coconut extract

    baking powder

    teaspoon
    baking soda

    Directions
    Step 1
    Preheat oven at 350 F.
    Step 2
    Sift flour, salt, baking powder and baking soda into bowl.
    Step 3
    In a separate bowl, combine butter, sugar, vanilla, and eggs (one egg at a time) until mix is fluffy.
    Step 4
    Fold in flour mixture. Do not over mix.
    Step 5
    Evenly distribute the mixed batter into cupcake pan.
    Step 6
    Place cupcake pan in oven and bake for 20 minutes.
    Step 7
    Remove cupcakes and let cool for about 30 minutes.
    Step 8
    Once cupcakes have cooled, inject each cake with about 2 ounces of the coquito drink.
    Step 9
    *If you do not have an injector, a good alternative is to gently poke each cupcake with a fork (so as not to break up the cake) and then baste it with the coquito.
    Step 10
    Allow cupcakes to sit in the fridge for at least an hour.
