Mote Pillo is a traditional Ecuadorian hominy and egg scramble. The onion and garlic refrito base gives this scramble a delicious flavor which is absorbed by every hominy kernel. This dish has queso fresco and a hint of achiote powder which gives it some color and a sprinkling of cilantro to finish. We suggest cooking this dish up in one of our favorite skillets so it can go from stove to oven to table in style.
