Breakfast in Bed: Strawberry Topped Pancakes with Pink Whipped Cream

Growing up, pancakes were a Sunday morning staple in my house. I can still see it so clearly: my dad would make us piles and piles of them. He would stack an especially tall tower for me, pancake after pancake, each smaller than the one before until the tiniest pancake on the tippy top of the pile (usually a droplet of pancake batter that had fallen on the griddle). They were, and remain, one of myf favorite dishes to eat.

I'm recreating the recipe for my husband who loves pancakes as much as I do! I'm making the breakfast extra special by dousing the pancakes in a sweet sauce of heart shaped strawberries and then topping the whole thing with a generous dollop of pink whipped cream. It's guaranteed to win the heart of anyone you love! So warm up that griddle and get to making these loving hotcakes. 

Strawberry Topped Pancakes with Pink Whipped Cream

  • 1 pound strawberries
  • 2 tablespoons lemon juice
  • 1/2 cup sugar
  • 1 1/4 cup flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 1 pint heavy or whipping cream
