Healthy Arroz con Pollo
This recipe has skinnied up a traditional arroz con pollo by using skinless chicken breast (instead of skin-on) and cooking it in a fraction of the oil ordinarily used.
In Puerto Rico and Dominican Republic, these wrapped goodies are made in large quantities during the holidays, often with several family members sharing in the tasks of preparation. A food processor or blender makes the job easier. If you can't find banana leaves, you can use parchment paper. This recipe makes 16 to 20 pasteles.
