    Cachitos Verdes

    Cachitos Verdes are moist sweet rolls filled with a mixture of baked ham, queso blanco, and broccoli. Perfect as a side with bowl of black beans or a mixed salad. A great way to use some of the Easter ham leftovers!


    Ingredients

    whole wheat flour

    warm water

    raw broccoli
    1/2
    cup
    diced queso blanco
    1
    teaspoon
    salt

    teaspoon
    ground black pepper
    1
    tablespoon
    butter, softened
    1
    cup
    diced baked ham
    Directions
    Preheat oven to 350F.
    In a stand mixer with hook attachment, mix flour, olive oil, sugar and yeast. Add water with mixer on low, until dough forms a ball and separates from the sides of the bowl.
    In a food processor pulse broccoli, queso blanco, salt and black pepper until it resembles crumbles.
    Overturn dough on floured surface and divide into thirds.
    Roll first third into an 8 inch circle and cut into 8 equal triangles, similar to pizza slices.
    One slice at a time, add 1 tablespoon of ham and 2 teaspoon of broccoli and queso blanco mixture to widest part of triangle and roll from the wide end to the point making a crescent shape.
    Place cachitos on lightly sprayed cookie sheet and repeat with remaining dough and ingredients.
    Bake cachitos for 15 minutes, brush tops with butter and broil for up to 5 minutes until golden brown.
