    Green Pico and Mozz Topped Mini Polenta Pizzas

    Green Pico and Mozz Topped Mini Polenta Pizzas are fun and easy to put together, making pizza night a breeze. Quick cooking polenta is what helps bring gluten-free pizza to the table in no time!


    Ingredients

    13.2 ounce box Polenta Valsugana or any quick cooking polenta
    1
    cup
    marinara sauce
    1/2
    cup
    mozzarella
    1/2
    cup
    pico
    1/4
    cup
    finely chopped zucchini

    salt and pepper to taste
    Directions
    Cook polenta according to manufacturer’s directions. Pour out onto a greased baking sheet and spread out evenly into 1/4 inch thickness. Allow to cool completely, then cut out circles using a 4-inch round cookie cutter.
    Preheat oven, with baking stone, to 425F. Place rounds on stone and bake for 10 minutes on each side.
    Remove from oven and top with marinara and mozzarella. Return to oven for another 8-10 minutes, until crisp on edges. Remove pizzas from oven and plate.
    In a small bowl, mix together pico de gallo and zucchini, then evenly distribute onto pizzas.
    Top with salt and pepper to taste.
