    Guiso de Papas al Horno

    Comfort food at its finest, Guiso de Papas al Horno takes potatoes, sweet green peppers, onion, garlic and tomato to another level. Throw this dish in the oven, put a timer on it, and forget it until you're ready to serve. Use as a side dish, or a filling for empanadas or chiles, it's up to you!


    Ingredients

    medium potatoes diced into 8-10 even pieces per potato

    diced medium onion
    1
    diced large green pepper
    2
    diced garlic cloves

    tablespoon
    paprika
    1
    teaspoon
    chili powder
    2
    tablespoons
    Olive Oil
    1/2
    teaspoon
    red pepper flakes
    1
    salt and pepper to taste
    Directions
    Preheat oven to 350 F.
    In a large bowl add potatoes and cover with cold water for five minutes. Drain and dry potatoes.
    Add olive oil, red pepper flakes, chili powder and paprika to an oven safe dish. Stir to combine.
    Add remaining ingredients to oven safe dish and toss ensuring everything is evenly coated. Taste the oil and add salt and pepper as needed.
    Transfer dish to oven and bake for 1 1/2 hours or until potatoes are tender, reduced in size and crisp on the edges.
