    Hatch Chile Strips in Red Salsa

    Hatch Chile Strips in Red Salsa is a very versatile recipe.  Use it enchiladas, tostadas, or even in your hamburger for an unexpected kick.


    Ingredients
    1
    pound
    Hatch chiles, roasted, deveined, seeded and cut into strips

    tomatoes
    1
    large onion, sliced in rounds
    1
    clove
    garlic, minced
    2
    tablespoons
    Olive Oil

    tostadas
    Directions
    On a comal or skillet, place washed tomatoes and roast over medium to high heat until soft, turning over once. Remove and let cool.
    Place roasted tomatoes, garlic and salt in blender and blend until smooth.
    On a large skillet, over medium flame, heat oil.
    Add onion and sauté until tender. Add tomato mixture and roasted chiles. Reduce heat.
    Cover and let simmer for 10-12 minutes. Enjoy with tostadas.
