    Sweet Potato Pie Mousse

    Enjoy the flavor you love without the crust in this simple to make and deliciously light Sweet Potato Pie Mousse.


    Ingredients

    sweet potato puree
    1
    teaspoon
    cinnamon

    tablespoons
    shredded panela
    1
    teaspoon
    vanilla
    1/2
    teaspoon
    ginger
    1/8
    teaspoon
    cayenne
    12
    ounces
    frozen whipped topping
    *
    unsweetened shredded coconut, for garnish
    Directions
    In a large bowl combine sweet potato puree, cinnamon, panela, vanilla, ginger and cayenne. Adjust sweetness to taste.
    Carefully fold in whipped cream until mostly combined with little streaking.
    Transfer mousse to smaller containers and sprinkle with shredded coconut. Keep refrigerated until serving.
